We welcome groups or individuals seeking an intense experience with the territory and with food that is at the same time rich in emotions and fun. For us food is at the same time, culture, tradition, and pleasure in making and tasting, in sharing, it is conviviality and gratitude.  Cooking means taking care of yourself, not only our body but also our emotions .

This is the common theme of our cooking classes, which are divided into:

  • Gourmet events. Short courses of 3 hours and aimed at traditional specialities
  • Gourmet experiences. 1-day modules to enjoy one at a time or to be combined in Gourmet Stays, customised combinations of several days, up to the full 7-day journey, to discover the territory in all its elements, its food production culture and its culinary tradition.

Short courses
  • “The art of pasta”: handmade, including tagliatelle, gnocchi and ravioli
  • “Oh what an amazing job it must be being a baker” : traditional bread, torta al testo and Umbrian Easter cake”
  • “The gifts of the vegetable garden”: to be harvested in the vegetable garden and then in the kitchen to discover the thousand tastes and colours of dishes based on cooked and raw vegetables
  • “Let’s sweeten our lives”: getting to know and make traditional sweets
Duration 3 hours
  • “The king of Umbrian meats”: pork and the art of working it. From the typical dishes to the processing of cold cuts. You will learn how to salt your cured meats that you will then mature at home
  • “Fisherman for a day”: fishing with the fishermen of Lake Trasimeno and then in the kitchen to prepare the fish
  • “The magic of black gold”: harvesting truffles in the woods with a real truffle hunter and their dog and its preparation in traditional dishes
Duration 6 hours

At the end of each course there is a convivial tasting by the participants of the prepared dishes. Each short course can be combined with a stay at our Resort on a B&B or half-board basis

Gourmet stays

Gourmet stays are complete local experiences that include a stay, full meals, cooking classes, visits and themed activities. Each module lasts a full day and can be combined with others as desired, creating modules from several days in personalised mode up to 7 days in duration

Each Module includes

  • An overnight stay in a double superior, junior suite or suite and breakfast buffet or breakfast served in the room
  • Lunch and dinner
  • Cooking classes
  • Collateral activities

H 14:00 – walk to Madonna della Penna

Lunch based on dishes prepared during classes based on handmade pasta

H 16:00 – Visit and tasting of wines from the Berioli winery in Montesperello for wine tasting

H 18 – Return to the Cantico and dinner with appetisers, pasta and Umbrian Chianina meat dishes

Pork and the art of working it. From typical dishes to the processing of cold cuts

H 10:00 – cooking lessons: “The king of Umbrian meats”:  the art of processing pork, from typical dishes to the processing of cured meats. You will learn how to salt your cold cuts and take them home to mature them

Lunch based on dishes prepared during the lessons combined with Cantico Organic Oil

H 16:00 – departure for the visit of Cornicchia di Corciano cold cuts factory and tasting

H 18:00 – Return to Cantico and dinner with pork dishes

The gifts of the garden and nature

To be collected in the garden and in the fields then in the kitchen to discover the thousand tastes and colours of dishes based on cooked and raw vegetables

H  8:00 – Friendly breakfast and presentation of the programme of the day

H  9:00 – Collection in the garden and of field herbs for the raw material to be cooked

H 10:00 – Cooking class: “The gifts of the garden and nature”: collection in the garden and in the fields

Lunch based on dishes prepared during the lessons combined with Cantico Organic Oil

H 16:00 – free visit to the local area or an opportunity for relaxation

H 18:00 Return to the Cantico and vegetarian/vegan dinner based on seasonal vegetables and legumes combined with 3 Umbrian oils of different flavours

H 18:00 – Return to the Cantico and dinner with dark chocolate dishes

Fisherman for a day

Fishing with the fishermen of Lake Trasimeno and then in the kitchen to prepare the fish

H 10:00 – at the lake with traditional fishermen:  “Fisherman for a day”: fishing with the fishermen of Lake Trasimeno

Fast buffet lunch

H 15:00 – cooking class: the art of preparing Lake fish

H 18:00 – Return to the Cantico and dinner with fresh fish from Lake Trasimeno caught with the fishermen

The magic of black gold

Harvesting truffles in the woods and preparing them in traditional Umbrian dishes
