Who we are

The history of the Cantico comes from the stories of our predecessors, all united by a common theme: 400 years of history, life, passions… 400 circles of the trunks of the school olive trees that surround it, planted by the friars who laid the first stones of the small convent, chosen because it is a special place, with a view over the lake, full of energy and close to an ancient source of water that still nourishes it today. It is from this spiritual community that the history known to us of this ancient place begins, where the Etruscans affirm its vitality and energy since much more distant times when Mount Penna, which sternly dominates the Cantico, was one of the points of passage on the road between Chiusi and Perugia, 2 of the most illustrious cities of the kingdom of the “Mystical people”.

Our Philosophy

Il Cantico has been an Ecoresort since its inception, one of the first in Italy, a place within an organic agricultural focus, with an authentic Ecologic soul, which translates into the adoption of a set of parameters for the protection of the environment. It is our vocation, we are a place that naturally expresses beauty and harmony with creation. The ancient stone farmhouse is in symbiotic continuity with the wonderful natural environment that surrounds it and with the energy of the starry sky. It is from this encounter between earth and heaven, between real life and dreams, that our philosophy originates that has the ultimate goal of offering well-being to our guests based on 4 elements : Nature, Territory, Spirituality and Love.

We are located in an unspoilt setting, boasting ample spaces, an ideal place to enjoy a stay in contact with nature, to taste local and organic food, to enjoy relaxation and privacy thanks to a set of elements that have been part of our way of operating from the outset and that translate into a set of Eco parameters to protect the health of the environment, our staff and our guests, all of whom have very special importance for us

Biological agriculture

Farm Estate

Our 25-hectare farm specialises in the production of organic extra virgin olive oil. The centuries-old olive grove has around 1400 plants of the Frantoio, Leccino and in particular Dolce Agogia varieties, typical of Lake Trasimeno. Cold pressed, strictly immediately after harvesting, our oil has first-class organoleptic and nutritional characteristics, as well as an extremely pleasant taste. In addition to oil, we produce rotating crops in our arable fields. In addition to colouring the dishes of our restaurant, our vegetable garden is also the ideal place for our guests to personally pick organic vegetables to take home. In our “from land to plate” philosophy we have sought to combine organic production and solidarity.
